Quinoa chocolate cake
This is a great recipe for the quinoa flour that you’re just made, and I have to say that it’s my favourite quinoa cake recipe. Be sure to check that all added ingredients are also gluten free. One of the key things to remember when baking with gluten free flours is that you will need to add xanthan gum to make the cake have a nice fluffy texture.
Ingredients
- 185g of fine quinoa flour
- 40g of cocoa powder
- One tea spoon baking powder
- Quarter of a tea spoon bicarbonate of soda
- Xanthan gum (adding the recommended amount on the packet is best)
- 225g margarine
- 225g caster sugar
- 4 eggs
For the topping
- 85g of margarine
- 200g of icing sugar
- 115g of melted 70% chocolate
Method
Beat all of the ingredients together in a mixer until creamy. If the mixture is not quite ‘dropping’ consistency then add a little milk until the consistency is correct. Put into two greased and lined sandwich tins, baking at 150oC until firm to the touch.
Adding a topping and filling to this cake is a great way to finish it off. For the topping, eat the ingredients together in a mixer, before using to fill between the two layers of cake and to finish the top.
