Quinoa & Black Bean Burger
with Smoked Paprika Sweet Potato Wedges & Herby Sauce
(serves 2)
SERVING:
Serve in a bun with salad, herby tomato sauce and with withe smoked paprika sweet potato fries.
Ingredients
Burgers:
- 100g British Smoked Quinoa
- 240g Black Beans
- 2 Garlic Cloves
- 2 tsp Smoked Paprika
- 2 tsp Cumin
- 1 tsp Chilli Flakes
- Handful of coriander
- Olive Oil
Herby Sauce:
- 4 tbsp Tomato Puree
- 2 tsp Mixed Herbs
- 1 tsp Olive Oil
Smoked Paprika Potato Wedges:
- 1 very large Sweet Potato
- 4 tsp Smoked Paprika
- Few sprays of Olive Oil
Method
Burgers:
Cook the quinoa according to the packet instructions
Drain the black beans and cook in a post with crushed garlic and olive oil
Once both the quinoa and black bean are cooked combine together in a mixing bowl (whilst hot) with smoked paprika, cumin, chilli flakes and chopped coriander using a potato masher.
Split the mixture into 4 sections, take each section individually and roll into a ball. Press down and shape to form an appropriate burger shape.
Fry in olive oil in a sauce pan for approximately 5 minutes each side on a medium heat.
The burgers should go crispy on each side.
Herby Sauce:
Combine tomato puree, mixed herbs and olive oil in a bowl.
Smoked Paprika Potato Wedges:
Cut the sweet potato into wedges and combine in a bowl with olive oil and smoked paprika.
Place on a baking tray and bake in the oven for 20-25 minutes at 200 degrees.
After 10 minutes flip to the other side.
