Grilled cauliflower steaks and herby quinoa
Firstly, start making your quinoa (as stated on the packaging).
Slice your cauliflower into steaks then rub a little olive oil, salt and pepper into each one.
Pop onto your grill.
While your cauliflower steaks are cooking, finely chop your mint, parsley and pomegranate.
Once your quinoa is cooked mix together with the mint, parsley and pomegranate.
Add your cauliflower steaks and you’re good to go.
You can also add a chimichurri sauce – optional.
